Cassava Cake – Carbohydrates For Your Energy Needs


Carbohydrates have essential functions to perform. They provide most of the energy in the diet and supply an appreciable amount of protein. About 50-57 precent of our calories should come from carbohydrates, to supply us with energy to keep us alive, alert, awake and enthusiastic!

Found almost exclusively in plant foods, carbohydrates are abundant in root crops, cereals, grains, legumes, vegetables, and fruits. Milk is the only animal-derived food that contains significant amounts of carbohydrates.

Root crops that have high starch content include cassava (kamoteng-kahoy), taro, sweet potato (kamote), white potato (patatas),  goayam (toge),  and purple yam (ube). Among these crops, cassava has the biggest amount of starch, which amounts to 34 percent. Tapioca is the commercial term for cassava starch.

Cassava is commonly serve as suman or plain boiled., topped with sugar and grated coconut. One can also turn cassava into a special treat for parties, potlucks, and family meals. Today I will share to you a special recipe using cassava as the main ingredient. An easy-to-do and economical cake that tickles the Pinoy and even foreign palate.

Cassava cake is delicious and provides significant amounts of carbohydrates to supply the energy needs of the active child, growing teenager, busy housewife, and working dad.

You will need the following ingredients: 5 cups grated cassava, 2 cups sugar, 1 cup powdered whole milk, 2 eggs — beaten, and 5 cups coconut milk.

For the Toppings, you will need grated cheese and condensed milk.

Mix thoroughly the first four ingredients. Add coconut milk and mix well. Pour into a greased baking pan. Bake in moderate heat for about 45 minutes or until the top is almost dry. Remove from oven. Pour condensed milk evenly on top of cassava cake, then sprinkle with grated cheese. Bake again until golden brown or until cheese and milk melt.

This recipe will make 24 servings of 2.5″ x 2.5″ bite slices, in an 15″ x 10″ baking pan. Enjoy!

What Makes You Proud Being A Parent?


I am proud of being a mother to four beautiful and healthy kids, two sons and two daughters. I consider them my trophies and my greatest achievements in life.  Parenting four children is not an easy task. It is an unpaid profession with a lifetime responsibility of building a godly and firm foundation for my children’s spirituality and morality. With God’s grace, I will be proud to present my four trophies to God.

Watching kids grow from infancy to childhood, to adolescence, is a fascinating experience. Despite the challenges and the different roles parents have to play, parenting is more of a puzzling yet rewarding journey.

I’m proud to be a mom. God has entrusted me with healthy and bright children. I can see that they cope well to varied circumstances. They interact well with visitors, relatives, and friends. They behave appropriately in church, school, and public.  The Lord has blessed me with children having physical, emotional, social, and spiritual lifestyles. Being an example to them, especially in spiritual sense, could be a difficult task, but I’m glad that they have embraced the teachings of Jesus.

Wise Mom Tips in Proper Usage of Microwave Ovens


Most modern home kitchens have microwave ovens. Aside from the fact that it is lighter and does not take up too much space, it is easier to use in cooking different type of dishes. But microwave ovens require maintenance, caring and cleaning too. Today, I will share some tips in proper usage of the microwave oven and how you can keep your microwave ovens good as new.

To avoid unpleasant odors to develop inside the oven, leave the door open for a few minutes after each use. This should also be done in case you are cooking diferent type of dishes, to avoid the smell of one food to stick with the other, thus ruining your perfect recipe. After using, leave the door open for awhile not only for the smell to exhaust, but also to make the heat subside faster.

Once the oven is not in use, be sure to have it unplugged to avoid any accidents. Clean the oven by spraying the inside with an all purpose cleaner and wipe with a cloth. You may also use baking soda mixed with water, in cleaning.

Avoid trying to microwave something too big for the oven. Doing so would not only make the lifespan of your device shorter and cause damage on the hinges, but as well as endanger your health. Opened microwave oven while cooking mayu expose you to leaking microwave radiation.

Regularly check the gaskets or the rubber ring that cushions the microwave oven door to be sure that it seals properly. Lastly, be sure to keep them in place where your young ones could not reach or play with them.

Dealing With A Kid who has Lactose Intolerance


As a wise mom, you should know all the possible conditions of your kids or any family member, so you can find a way to deal with it properly, and to keep them healthy at all times.

One of my kids have this lactose intolerance condition. For the benefit of those who doesn not know, lactose intolerance is a condition that arises from a genetic inability of the intestine to digest lactose, the predominant sugar in all dairy products. The intestinal enzyme called lactase breaks down lactose into simple sugar that the body can easily digest. Lactose intolerant people, however, have an inadequate amount of such enzyme.

It is easy to find out if you or any of your kids, or family member is suffering from this condition. Whenever a person who has lactose intolerance, gets to ingest milk or any dairy food, they suffer from abdominal cramps and nausea.  Some lactose intolerant people can mange to stomach certain dairy products in relatively small amounts; but others have to completely avoid them, otherwise they would be suffering from mild to sever stomach aches.

I found out that one of my kids was suffering from the said condition, because she always complain of tummy pain after ingesting certain amounts of dairy products. When she was young, it was hard because growing kids need dairy produts as a source of protein and other minerals. So, what I did was research for certain protein and calcium-rich food that would still meet her  daily dietary needs.

Cereal made of ground monggo and oats. I feed her with fish with vegetables like malunggay (horseradish) or saluyot with bamboo shoots, or dishes like broccoli or  cabbage, with either tokwa or tofu. And still let her drink milk, but instead of the usual cow’s milk, I give her soy milk instead.

There are unlimited number of dishes and other dairy product replacements that you can give a person with lactose intolerance. This way they can continue to enjoy their food, life, and live normally without having to suffer from too much pain due to their condition.

How To Keep Your Silverware Clean and Tarnish-Free


Today, I will share some wise mom tips on how to keep your silverware clean and tarnish-free. Some might say, oh that’s such an easy task. But who knows? You might be doing it all wrong! It is important to keep our silverware clean, looking new and tarnish-free at all times. Even the smallest details would reflect on what kind of a home-maker and person you are.

Cleaning and caring for your silverware

Wash them promptly after every meal to keep them tarnish-free, and to avoid discoloration. Wash silverware in hot, sudsy water, and rinse them in hot, clean water. Do not soak silverware in water for long periods. Doing so loosens the knife handles and dulls the finish.

Wash silverware immediately after contact with certain foods like mayonnaise, mustard, eggs, and any form of rubber, because they tarnish the silver.

Using a clean cloth, dry each piece immediately, right after washing. It is important to wipe each piece of silverware dry. Never leave them to try themselves.

Then store properly in a place where it wont get scratched and would not get exposed to air. Constant exposure of silverware to air will cause them to tarnish.

Apply a silver cleaner on a soft clean cloth. Wipe the silverware using gentle. lengthwise strokes until tarnish is removed. Follow the contour of each piece, and never use circular or rubbing motion.

Wash silverware in hot, sudsy water, and rinse them thoroughly in hot, clean water. Then wipe them dry immediately, after washing. Store properly.

Today, I will share the wise mom secret of making the best waffle in the world. What makes it the best? It is because this waffle contains a number of cardio and cancer-protective phyto nutrients. This is a nutritious food that you can either serve for a meal, or a healthy snack for your kids and husband. Your whole family ould surely love this! If you are a business-oriented person, you may want to offer this waffle as one of your special treats.

How To Make The Best Waffle in The World

WaffleIn a blender, place 3 cups of water. Then Add 2 cups of old fashioned oats rich in great soluble fiber. Microwave 1/4 cup high lysine yellow cornmeal in 1/2 cup of water. Slowly pour into the mixture in the blender. Add 1/4 cup soy powder (fortified with calcium and vitamin B12). Add 1/2 teaspoon salt (to bring out the whole grain flavor). Blend these ingredients until smooth and let them set for 3 to 4 minutes
Pour blended waffle batter into a hot waffle iron. You may need to add a little more water into the batter so that it would pour out easily. Then, sprinkle the top of the waffles with ground flaxseed or pumpkin seeds, high in omega 3 fatty acids. Bake for 10 to 12 minutes or until the waffle is light golden brown and crisp. When the batter is of proper consistency. The waffle will be as light and crisp as a vanilla wafer.
Once the waffle is already baked, spread lightly with whip or all purpose cream, or if you prefer almond butter or mono rich peanut butter. Then, sprinkle with fresh honey or maple syrup, top with your choice of variety of fruit toppings, such as deep blueberries, ruby-red raspberries or strawberries, green kiwi or mango slices, papaya, peaches, apricots, etc. Serve with cold tea or a healthy fresh juice of your choice.

Soybean products like tofu, soymilk and tokwa are rich in protein. They have twice as much protein as the common beans. Soybeans have sufficient amounts of essential; amino acids needed bhy the body. They are also very affordable.

So, to those wise moms out there who want to stay on the budget while feeding their families with healthy food, consider using soybean products. Here is one recipe I’d like to share that your kids will find yummy.

For the ingredients, you will need 1 kilo of tokwa or tofu , 1 1/2 cups of cornstarch, 2 teaspoons blackpepper, salt and curry powder, 1/2 pack cream of mushroom powder, 2 tablespoons chicken powder, if available, and last but not the least, 2 cups of oil for deep frying.

First, Cut tokwa or tofu into cubelets. Set aside. Then, combine all the dry ingredients. Preheat the oil in deep sauce pan. Roll and dredge the tokwa or tofu cubelets into the flour mixture and deep fry til golden brown.

This dish is best served when hot, and as an alternative to chicken nuggets. Serve with ketchup, gravy, or your kids choice of sauce. Happy healthy eating!

How Much Protein Do We Really Need?


Protein is a very important part of the daily diet. It supplies the body with tissue-building materials known as amino acids. This function can be done only by protein itself. This is why growing kids need proper protein intake, to help build strong muscles.

Because our body does not store protein, we need a daily supply of it from external sources through the food that we eat. Children and adult alike, require a regular protein intake proportionate to their body weight inj order to maintain overall health and well-being. Do you know that children should consume protein more than adults? This is because protein needs decline as a person ages.

Too much protein, however, may eventually lead to heart disease. Many animal foods considered to be major sources of protein are actually high in purines and saturated fats which may cause elevated levels of blood, uric acid and cholesterol.

Keep in mind that animal foods such as red meat, poultry, fish and dairy products are not the only sources of protein. More economical protein-rich alternatives are vegtables such as legumes including beans, dried peas, peanuts, grains as well as vege-products like tofu, tokwa, gluten, and other vege meat of all sorts. Recent studies show that you can actually do awaywith animal protein in your diet. Protein from vegetable sources is easily digested and asimilated by the body.

Advantage of Having a Playroom for Kids


One of the most important part of our house is the playroom aka family entertainment room. It is great to have a children’s playroom or play area in your homes for so many reasons. First of all, it means that your bedrooms, living room, dining room, kitchen and other parts of your home do not get cluttered up with children toys and other playthings. Not all families have the luxury of an extra room, where you can place all the toys and playthings, and make your children spend time exclusively for playing, but if you have an extra room to spare in your house, think hard about this idea, because you will realize how helpful it would be, most especially in keeping yopur home organized.

The task of cleaning the whole house is definitely more difficult and time consuming compared to cleaning up just one specific area or room. And if your kids get a bit older,
you can transform it into a family entertainment room where you can add game tables, and other gaming and entertainment gadgets where the whole family can play together, during weekends or evenings. Come to imagine how great it would be if the family can all be at home at special occasions and play your favorite family game — or watch movies together, play xbox or playstation, dance revo, and even pool, if you have a pool table. It could really help keep the family together and do something in common at home.

It could also be a great hangout for your teens who would rather bring and invite their friends over for a good entertainment, rather than them going out to places where you are not sure if they are safe. And while everyone has a place to have great and clean fun at home, the rest of your home is free from getting messed up, so there is no need to do general cleaning every day. It would also be a perfect place to keep all the toys as a collection of your family, toys that you can still hand down to your grand kids.

Most kids who have sleeping problems have messy rooms filled with toys and all other gadgets that distracts and diverts their attention. So, another advantage of having a separate playroom is that your kids will be able to sleep well in their bedroom, since they will only be using it for relaxation, and sleeping. And they can fix their own rooms and clean their own rooms too, but if your kid is still small, you can do the cleaning up but and it will be less messy without all the toys scattered all over. So, think about sparing that one special room that could make a lot of difference than you can imagine.

Dealing With Kids Tantrums


A parent’s role in a child’s life reflects much in a child’s conduct, mental attitude and even in his achievements. The manner a child is raised is mirrored in his natural actions, as he matures, as an adolescent, a full-grown individual, and later in life as a parent. The prime years in a child’s life are crucial in the development of a child’s behavior. Many kids are inclined to be kind of passive while others exhibit a more hostile behavior. Aggression is one of the basic reactions to frustration that an infant learns. But what stimulates such aggressive demeanor in a child? Aggressive youngsters tend to yell, bite, push, hit and scratch. Kids tantrums are commonly the effect of a child’s frustration after he feels neglected, blamed, and hated by his parents. So can a parent relieve or even get rid of temper tantrums?

When a youngster is experiencing a temper tantrum the parents must devote close attention to what is really inducing such demeanor on the child. What made him get upset? Who got him upset and why? And before they do anything about it, they must think of the best possible approach they can take so as to make the kid feel understood and loved. Kids tantrums tend to be the action of a youngster with the purpose of catching theire
parents’ attention.

There are even times that a kid would choose to just yell at his parents, so he can get their attention. So how are parents supposed to respond to such poor behavior? By simply letting the child express all his frustration without cutting off, the parents are already acknowledging that they are paying attention. The parents need to stay calm and respond in a composed comforting tone. If each time the child tries to yell the parents stop and listen, the child will soon learn to quiet down knowing that he is being heard.

What are the parents to do if a youngster always uses aggressive physical contact with others? Many parents tend to just give in to what the youngster wants in order to quickly stop such poor aggressive demeanor. But, is that the best resolution to the problem? Rather than teaching your kids the right behavior, you appear to tolerate them by giving in to their demands. Parents must take the youngster away from others until his frustration has stopped. Also, the parents need to provide the kid with more structure and routine on everyday basis. Spanking a little one does more damage than good. Communicating and understanding are two matters that can help an aggressive youngster to contemplate on his own demeanor with good outcomes.

Kids tantrums tend to be the effect of parents who only respond to a child’s bad behavior. Kids who exhibit aggressive demeanor also have their many moments of positive actions. Parents need to prompt themselves that looking for good traits in their offspring can make a difference in the little one’s attitude. Love, forbearance, sympathy and respect are also very essential elements that can direct to a closer relationship between parents and their youngsters.
